Even my love for vegan sweets was getting out of control with “testing” new recipes and of course, having to eat the experiments really didn’t help. Not that I’ve been eating tons of Oreos but with all the new vegan foods out there these days, it’s easy to get back into that same routine of eating more convenience foods that are highly processed and loaded with extra sodium, etc. That became clear as it was definitely showing in my waistline and other parts of my body. All of which I love and apparently eat way too much of. Cut out as much oil as I could, limit the extra fats I usually consume like: nuts, avocados, peanut butter, coconut oil, etc. For the last month I’ve been using the Forks Over Knives Meal Planner.Īlthough I don’t usually have problems coming up with meals to eat, I’ve been having a bit of “writer’s block” coming up with some different Whole Food Plant Based (WFPB) meals for us to eat lately.Īs the new year started I wanted to make a resolution to eat more well-balanced WFPB meals.
